Chocolate Chip Muscle Cookies

I recently received a package from Twin Lab Clean Series with a big tub of Vanilla Whey Protein Powder! Of course, the first thing I wanted to do is make some protein cookies (they’re my favorite because you can eat an entire batch with no shame).

These are not perfected and I will make some changes next time. I like to experiment and they can’t all be perfect.

Here’s my recipe, adapted from @brooke_b_fit on Instagram.

1/2 Cup Pumpkin PurΓ©e

1/4 cup Coconut Flour

1 Scoop Vanilla Protein Powder

Β 2 tbsp non fat Greek yogurt

3 tbsp egg whites

2 tbsp sugar free vanilla pudding mix

1 tsp baking powder

2 tbsp dark chocolate chips

Mix all dry ingredients and set aside. Whisk the egg whites until fluffy and then add pumpkin and yogurt. Combine both dry and wet and add chips. Let chill for 15 minutes in freezer. Do your best to make 1″ balls and place them on a baking sheet lined with parchment paper and press them flat. Bake at 350f for 12-15 minutes. I like mine a little undercooked so they are gooey. πŸ™‚
